What will you be sipping when the Times Square Ball drops us into 2018? Champagne will certainly be popping as we celebrate the new year! Serve this delicious Pear & Ginger Prosecco at your NYE party while you enjoy performances by Mariah Carey, Neil Diamond, Nick Jonas and Andy Grammer, to name a few.
Pear & Ginger Prosecco

Ingredients
2 bottles prosecco
3/4 cup grated pear
2 tbsp minced ginger
2 tbsp honey
1 cup waterHandful of fresh sage
1 pear sliced, as garnish
Directions
1. First, make the infused simple syrup. Combine your water, grated pear, minced ginger, a handful of sage leaves (leave some for garnish) and honey in a small pot on the stovetop. Bring the mixture to a boil, then turn down to a simmer for 10-15 minutes, stirring occasionally.
2. Strain out the leaves and any ginger or pear chunks. Refrigerate the syrup to cool. Pro Tip: if you don't have enough time between making the syrup and serving for it to cool properly, speed up the process by placing it in the freezer for a bit.
3. Serve in champagne flutes! Pour over a couple ice cubes in each flute 2 oz (one shot) of the syrup. Add a pear slice and a few sage leaves for garnish, then top it off with prosecco. Serve immediately with your very own foil stamped cocktail napkins.
