Summer means suntans and coconut mixed drinks. While we haven't quite made it to summer yet, we'll go ahead with the coconut! This tropical spin on a mojito will have you seeing the beach in no time. Coconut Mojito
Ingredients
2 oz white rum
1 oz coconut rum
1 oz cream of coconut
1 lime, juiced
Splash of club soda
8 fresh mint leaves
Lime wedges for garnish
Directions
Combine the mint leaves, lime juice and cream of coconut in a highball glass. Gently muddle to release the mint flavor. Fill the cup about 3/4 full with ice and then add both rums. Top with a splash of club soda, and garnish with mint and lime. Serve with a personalized cocktail napkin that matches your event theme!
